I realize that since I am new, I can only hatch one egg every 24 hours and I was wondering how do I raise that number to that I can hatch multiple eggs in one day?

Merchants are allowed to hatch one egg per day. Ranchers are allowed to hatch 3 eggs per day. So you would have to switch your class to Rancher if you wanted to hatch more. It doesn't have anything to do with you being new :) Keep in mind that when you switch to Rancher, you will no longer have access to your Merchant shop (including the till) and vice versa.
An alternate option would be to buy hatches from another user. (You send them the egg and a pre-agreed-upon fee. They hatch the egg for you and send you the creatu)
So you said that if I switch from a Merchant to a Rancher, I lose my Merchant's shop (and discount at the NPC shops as well, I assume). Does that mean I can change my class? I'd prefer to switch my class to Rancher because I was not sure what the classes were when I joined, but now that I understand the classes a bit more, I'd rather be a Rancher.

Yes. For the duration of your stay here on Res, you are allowed to switch classes 4times for FREE. However, if you still need to switch classes, you would have to purchase a Merchant Class Token or a Rancher Class Token depending on what class you wanted to switch to.
And yes, switching to Rancher will lose your discount at the NPC shops also your access to your Merchant Shops, however, the Rancher Shop will be available for you to sell pets.

It seems daily rewards allow you to have another hatch (second reward of the day for me, I don't know if the rewards are the same for everyone) but you need to do some actions around the site.
I Did not try that yet.
